Our chefs Jacques & Mathieu Lagarde present a new seasonal menu, created exclusively for this edition in collaboration with SOTO Wines.
Enjoy a four-course dining experience with perfectly curated wine pairings, designed to enhance each dish, for €55.
Guests will experience a menu built around contrast, where each dish is paired with carefully selected wines that bring out the best in every flavour.
A refined amuse-bouche sets the tone for the evening, served with bread and our beetroot salad in its purest expression: a profile that is slightly acidic, gently smoky, and lifted by a natural sweetness, finished with a delicate hint of hazelnut.
Next comes the main course: Iberian pork collar, rich and juicy savory pork. The dish is elevated with a jus infused with grilled ham, complemented by hazelnut seasoning and fresh parsley, creating a balance between richness and freshness.
To finish, the chefs present a sweet potato tamal with a soft, delicate interior and lightly crisp exterior. It is served with a spiced coconut sauce and a subtle touch of pepper, bringing warmth, sweetness and a gentle final contrast to the menu.
From start to finish, wines from SOTO Wines will accompany each course, to enhance the flavour of the dishes, creating a seamless dialogue between kitchen and glass.
