One ingredient that truly embodies the spirit of Andalucía is Iberian ham, a delicacy that has been perfected over generations. This month, we asked our chefs, Jacques and Mathieu Lagarde, to share their thoughts on this iconic product and why it holds a special place in their kitchen.

For our chefs, Iberian ham is more than just an ingredient; it is a symbol of craftsmanship and tradition. Made from free-range, acorn-fed Ibérico pigs, this ham undergoes a meticulous curing process, sometimes lasting up to four years, resulting in its deep, complex flavour.

At Cascada Marbella, we celebrate this Andalusian treasure in many ways—especially La Paleta, an underrated gem prized for its rich texture and depth of flavour. Our chefs believe that the secret to enjoying Iberian ham lies in its simplicity: quality speaks for itself.
