Our chefs Jacques & Mathieu Lagarde invite guests to discover a new seasonal menu designed around an unexpected and intriguing ingredient: coffee.
Enjoy an exclusive four-course coffee-inspired menu with four paired cocktails, for just €55.
Guests will begin the evening with a series of coffee-based cocktails, created especially for the event in collaboration with Café Baqué, our coffee partner for this edition.
Each drink has been designed to interact with the dishes, highlighting the flavours of the menu while exploring the depth, aroma and versatility of coffee in unexpected ways.
The culinary journey starts with a refined carrot amuse-bouche, accompanied by a vegetable sauce delicately infused with coffee beans, setting the tone for the evening.
The first course presents eggplant with fennel seed, paired with a silky eggplant purée and finished with a subtle sugarcane honey gel that brings balance and gentle sweetness.
Next comes a comforting and deeply aromatic dish built around celery, served three ways roasted, raw and as a smooth purée. Complemented by fresh sage, a light brown butter espuma and tender pork cheeks confit.
To finish, the chefs present a beautifully layered filo millefeuille with Tahitian vanilla, passion fruit and rum. The vanilla, recognised as the best in the world from 2020 to 2024, enriches a light diplomat cream, layered with delicate filo pastry and bright passionfruit gel, finished with a subtle touch of coffee powder.
Throughout the evening, coffee-inspired cocktails will accompany the menu, creating a unique tasting journey where each course reveals a new expression of coffee. This pairing experience lies at the heart of Wine & Spirits Club, where food and drinks are designed to evolve together throughout the dinner.
The event takes place inside Cascada’s warm and intimate dining room, creating the perfect atmosphere to enjoy this unique culinary experience together.
