Wine & Spirits Club returns to Cascada Marbella with a new edition, in collaboration with ARU, bringing back one of our most distinctive dining experiences, where food, wine, and storytelling unfold together at the table.
Our chefs Jacques & Mathieu Lagarde present a menu of dishes created exclusively for this occasion, guiding guests through each course alongside its wine pairing, and sharing the inspiration and intention behind every dish as the evening unfolds.

The experience begins with an amuse-bouche of foie gras, paired with blueberry jam and soft brioche. A rich and delicate opening that sets the tone for what follows.
The first course continues with a Pâté en Croûte, combining veal, Iberian pork and pistachios in a deep, savoury and textured bite, served with Ventoux Rosé 2025 – Projet F, whose bright character lifts the richness of the dish.
The second course brings Cebolla & Boffard, where slow-cooked onion meets the intensity of aged Boffard cheese, creating a warm and layered combination. It is paired with Côtes du Rhône Blanc 2025 – Cuvée 4 Baies, which highlights its savoury depth while keeping the palate clean and focused.
The main course features Chicken Piri-Piri with grilled corn, a bold and smoky plate where heat, char and natural sweetness come together. It is paired with Beaumes-du-Venise Rouge 2022 – Cuvée des Taus, echoing the spice and adding structure to the dish.
To finish, a Tahitian Vanilla Mille-Feuille delivers a refined and indulgent closing note, layered, crisp and creamy. It is paired with Mainake – lemongrass & basil “Mellow Yellow”, bringing a fresh herbal lift that lightens the final bite and rounds off the experience.
